Salad Ingredients

  • 3 pieces ripe peaches, halved and pitted Choose ripe peaches for the best flavor.
  • 1 tablespoon olive oil (for grilling) Brush onto peach halves before grilling.
  • 5 oz fresh arugula Use fresh arugula for a crisp texture.
  • 2 balls burrata cheese Torn into pieces before adding to the salad.
  • 1/4 cup toasted pine nuts Add for crunch and nuttiness.
  • 2 tablespoons balsamic glaze Drizzle right before serving.
  • to taste Salt and black pepper Season to your preference.

Preparation

  • Preheat your grill or grill pan over medium-high heat.
  • Brush the peach halves lightly with olive oil.
  • Grill the peaches cut-side down for 3–4 minutes, until you see grill marks and the fruit softens slightly.
  • Remove them from the grill and slice.

Assembly

  • On a large platter, arrange the arugula.
  • Top it with the grilled peach slices and torn burrata.
  • Sprinkle toasted pine nuts on top and season with salt and pepper.
  • Drizzle balsamic glaze over the salad and serve immediately.

Notes

Serve this salad fresh with grilled meats or as a light lunch. It is also great as a beautiful appetizer. Store leftovers in an airtight container in the fridge for up to a day; keep balsamic glaze separate if storing.
