  • 8 oz halloumi cheese, sliced
  • 2 cups cherry tomatoes, halved
  • 2 tbsp olive oil, divided
  • 1 tbsp balsamic glaze
  • 1 tbsp lemon juice
  • 1 tbsp chopped fresh basil
  • Salt & pepper, to taste

Preparation

  • Heat a grill pan over medium heat and brush lightly with olive oil.
  • Grill halloumi slices for 2–3 minutes per side until golden and crisp.
  • In a bowl, toss cherry tomatoes with remaining olive oil, lemon juice, basil, salt, and pepper.
  • Arrange grilled halloumi over a bed of arugula or mixed greens, then spoon the tomato mixture on top.
  • Finish with a drizzle of balsamic glaze and serve immediately for a fresh, salty-sweet summer salad.

Notes

For an ideal summer experience, pair your salad with crusty bread or pita chips. Can also serve with grilled vegetables or light protein like chicken or shrimp.
