Ingredients
  

Burrito Filling

  • 1 lb ground beef Make sure to drain the excess grease
  • 1 packet taco seasoning Or use a homemade blend
  • 1 cup cooked white rice
  • 1/2 cup sour cream
  • 1/2 cup nacho cheese sauce
  • 1/4 cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella
  • 4 large flour tortillas Warm tortillas to make them flexible
  • 1 Butter or oil for grilling

Instructions
 

Cooking the Beef

  • Brown the ground beef in a skillet over medium heat for 8-10 minutes. Drain the excess grease.
  • Add the taco seasoning and 1/4 cup of water. Let it simmer for 5 minutes.

Preparing the Tortillas

  • Heat the tortillas on a dry skillet or in the microwave to make them flexible.

Assembling the Burrito

  • Lay a tortilla flat and layer it with cooked rice, seasoned beef, nacho cheese, chipotle sauce, and sour cream.
  • Top it off with shredded cheddar and mozzarella.

Grilling the Burrito

  • Heat a clean skillet and sprinkle 2 tablespoons of shredded cheese.
  • Place the burrito seam-side down in the skillet and cook until the cheese melts and forms a crispy crust, about 3-4 minutes.
  • Flip and repeat on the other side.

Notes

If you have leftovers, store your Grilled Cheese Burrito in an airtight container in the fridge for up to 3 days. You can reheat it in a skillet or microwave. To make it vegetarian, replace ground beef with black beans or sautéed veggies.
