Ingredients
  

For the Burrito Filling

  • 1 lb ground beef Be sure to drain excess grease.
  • 1 packet taco seasoning Or use a homemade blend.
  • 1 cup cooked white rice
  • 1/2 cup sour cream
  • 1/2 cup nacho cheese sauce
  • 1/4 cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella
  • 4 large flour tortillas
  • Butter or oil for grilling

Preparation

  • Brown the ground beef in a skillet over medium heat for 8-10 minutes. Drain the excess grease, add the taco seasoning and 1/4 cup of water, and let it simmer for 5 minutes.
  • Heat the tortillas on a dry skillet or in the microwave to make them flexible.
  • Lay a tortilla flat and layer it with cooked rice, seasoned beef, nacho cheese, chipotle sauce, and sour cream. Top it off with shredded cheddar and mozzarella.

Grilling

  • Heat a clean skillet and sprinkle 2 tablespoons of shredded cheese. Place the burrito seam-side down in the skillet, cooking until the cheese melts and forms a crispy crust. Flip and repeat on the other side for 3-4 minutes.

Notes

Serve with extra sauces like salsa or guacamole, and add a side of chips or a fresh salad. Store leftovers in an airtight container in the fridge for up to 3 days. For a vegetarian option, substitute ground beef with black beans or sautéed veggies.
