  • 1 pound Fresh Brussels sprouts Trimmed and halved
  • 3 tablespoons Extra virgin olive oil For the marinade
  • 2-3 cloves Fresh garlic, minced

Preparation

  • Preheat your grill to medium-high.
  • Trim the stems of the Brussels sprouts and halve them lengthwise. If they are larger, quarter them for even grilling.
  • In a large bowl, whisk together olive oil, minced garlic, chopped herbs, salt, and pepper.
  • Add the halved Brussels sprouts to the bowl and toss them until they are well coated in the marinade.
  • Thread the marinated Brussels sprouts onto skewers. If using wooden skewers, soak them in water for 30 minutes prior to prevent burning.

Grilling

  • Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until they are golden brown and tender.
  • Remove the skewers from the grill and garnish with additional herbs or a squeeze of lemon for freshness.

Notes

Keep an eye on the Brussels sprouts while grilling to prevent burning. You can marinate the sprouts a few hours before grilling and refrigerate until ready to cook.
