Wet Ingredients

  • 3 ripe bananas, mashed Use very ripe bananas for best flavor and sweetness.
  • 1 cup Greek yogurt Adds moisture and protein.
  • 1/2 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour Can substitute some with whole wheat flour for a healthier option.

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a large bowl, combine the mashed bananas and Greek yogurt until smooth.
  • Stir in the sugar, eggs, and vanilla extract until well combined.
  • In another bowl, whisk together the baking soda, salt, and flour.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Pour the batter into the prepared loaf pan.

Baking

  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

You can add nuts or chocolate chips for extra texture and flavor. For long storage, freeze slices well to prevent freezer burn.
