Ingredients
  

For the Cupcakes

  • 4 pieces egg whites Use fresh egg whites for better volume.
  • 1/2 cup vegetable oil
  • 1 1/2 cup grape soda
  • 15.25 oz white cake mix Any flavor of cake mix can be used.
  • 0.14 oz unsweetened grape flavored drink mix
  • 4-6 drops gel food color Add extra for a more vibrant color.

For the Buttercream Frosting

  • 1 cup salted butter Make sure it's softened.
  • 2 tsp vanilla extract
  • 1/4 tsp almond extract
  • 4 cups powdered sugar
  • 2-3 tbsp heavy cream Use to adjust frosting consistency.
  • 4-6 drops food coloring Optional for frosting.
  • Purple sparkling sugar For decoration.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare your cupcake pans.
  • In a mixing bowl, combine the egg whites, vegetable oil, grape soda, cake mix, grape drink mix, and gel food color. Mix until smooth.

Baking

  • Pour the batter into cupcake liners and bake for 18-20 minutes, or until a toothpick comes out clean.

Frosting

  • While the cupcakes cool, prepare the buttercream. Beat the salted butter, vanilla, almond extract, powdered sugar, and heavy cream together until creamy.
  • Add food coloring to the buttercream and mix until you reach the desired color.
  • Frost the cooled cupcakes with the buttercream and sprinkle with purple sparkling sugar.

Notes

Store your cupcakes in an airtight container. They can last for about 3 days at room temperature or up to a week in the refrigerator. Let them come to room temperature before serving. Feel free to use different soda flavors or frostings for variations.
