  • 1 teaspoon garlic powder Adjust to taste.
  • 1 teaspoon Italian seasoning Adjust to taste.

  • 1 cup grated cheese Mozzarella or cheddar works well.

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced tomatoes and cook for about 5 minutes, stirring occasionally.
  3. Stir in the cooked pasta and chicken or tofu.
  4. Sprinkle the garlic powder and Italian seasoning, seasoning with salt and pepper to taste.
  5. Mix everything well and cook for an additional 5-7 minutes until heated through.
  6. Sprinkle the grated cheese on top and cover the skillet for 2-3 minutes until the cheese melts.

Notes

This dish pairs well with a simple green salad or garlic bread. For a heartier meal, consider adding steamed vegetables on the side. Store leftovers in an airtight container in the fridge for up to 3 days or freeze portions for up to a month.
