  • 1 cup almond flour
  • 1/2 cup peanut butter Use natural peanut butter without added sugars or oils.
  • 1/4 cup honey or maple syrup Maple syrup can be used for a vegan version.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips Consider using dark chocolate or white chocolate chips.
  • 1 teaspoon vanilla extract

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine almond flour, peanut butter, honey (or maple syrup), baking soda, salt, and vanilla extract until well mixed.
  • Fold in chocolate chips.
  • Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Baking

  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for about a week. For longer storage, freeze for up to three months with parchment paper between layers.
