- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the strawberry cake mix, eggs, vegetable oil, and vanilla extract. Stir until everything is well mixed.
- Using a spoon, drop dollops of the dough onto a parchment-lined baking sheet.
- Bake for 10-12 minutes, until the edges are just set.
- Let the cookies cool completely on a wire rack.
- Once cool, drizzle or dip them in powdered sugar glaze, allowing the glaze to set before serving.

These cookies can be served with a scoop of vanilla ice cream or paired with fresh fruit salad. They can be stored in an airtight container for up to one week or frozen for up to three months.
