  • 8 cups Chex cereal (Corn, Rice, or a mix of both)
  • 1 cup Butter Can be substituted with coconut oil for a dairy-free version.
  • 1 cup Brown sugar Can be substituted with honey or agave syrup for a lower-sugar option.
  • 1/4 cup Molasses
  • 1 teaspoon Vanilla extract
  • 2 teaspoons Ground ginger
  • 2 teaspoons Ground cinnamon
  • 1/2 teaspoon Nutmeg
  • 1 cup Nuts (optional) Can be omitted based on dietary preferences.
  • 1 cup Dried fruits or candy (optional) Add for variety and extra flavor.

Instructions
 

Preparation

  • Preheat your oven to 250°F (120°C).
  • In a large mixing bowl, combine the Chex cereal with any nuts or add-ins of your choice.

Coating

  • In a saucepan, melt the butter over medium heat. Stir in the brown sugar, molasses, vanilla extract, ground ginger, ground cinnamon, and nutmeg until smooth and bubbly.
  • Pour the melted mixture over the cereal mixture, ensuring all pieces are evenly coated.

Baking

  • Spread the mixture evenly on a large baking sheet lined with parchment paper.
  • Bake for 1 hour, stirring every 15 minutes to ensure even crispiness.
  • Remove from the oven and let it cool completely before adding optional decorative M&Ms or chocolate chips.

Notes

Store the Gingerbread Chex Mix in an airtight container for up to two weeks. You can customize the mix with other ingredients like chocolate or coconut for added flavor.
