Ingredients

  • 1 pound beef (sliced thinly) Choose tender cuts for best results.
  • 2 tablespoons ginger (grated) Fresh ginger is preferred for flavor.
  • 2 tablespoons soy sauce Use low-sodium soy sauce if desired.
  • 1 tablespoon honey Adjust sweetness to taste.
  • 2 tablespoons sesame oil For a nutty flavor.
  • 2 green onions (sliced, for garnish) Adds freshness and color.

For the Mashed Carrots

  • 2 cups carrots (peeled and cubed) Cook until tender.

Instructions
 

Cooking Ginger Beef

  • In a pan, heat sesame oil over medium heat.
  • Add the beef and stir-fry until browned.
  • Add grated ginger, soy sauce, and honey to the pan.
  • Cook for another 5 minutes until the beef is cooked through and the sauce is thickened.

Preparing Mashed Carrots

  • In a separate pot, boil carrots in salted water until tender.
  • Drain and mash the carrots, adjusting seasoning with salt and pepper.

Serving

  • Serve the ginger beef over a bed of mashed carrots.
  • Garnish with sliced green onions.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat gently to serve. Consider marinating the beef for added flavor.
