Ingredients
  

For the Cobbler

  • ½ cup unsalted butter (melted)
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 cup whole milk
  • 2 teaspoons vanilla extract
  • 3 cans (15 oz) sliced peaches, rinsed and well-drained
  • 1 cup light brown sugar (packed)
  • 1 tablespoon fresh lemon juice

Preparation

  • Preheat your oven to 350°F (175°C) to ensure even baking.
  • In a mixing bowl, combine melted butter, flour, granulated sugar, baking powder, milk, and vanilla extract. Mix until smooth.
  • In another bowl, mix the drained sliced peaches with light brown sugar and lemon juice.

Assembly and Baking

  • In a baking dish, pour the batter to cover the bottom evenly.
  • Add the peach mixture on top of the batter without stirring.
  • Bake in the preheated oven for about 40-45 minutes or until the top is golden and set.

Notes

Serve warm, optionally with vanilla ice cream. Store in the refrigerator for 3-4 days.
