  • 2 pounds Baby or Yukon Gold Potatoes, halved
  • 3 tablespoons Olive Oil
  • 4 cloves Garlic, minced
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 teaspoon Dried Thyme or Rosemary
  • ½ teaspoon Paprika (optional)
  • 2 tablespoons Fresh Parsley, chopped, for garnish

Preparation

  • Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a bowl, toss potatoes with olive oil, minced garlic, salt, pepper, herbs, and paprika (if using).
  • Spread potatoes in a single layer on the baking sheet, cut side down, ensuring they're spaced evenly.

Roasting

  • Roast for 25–35 minutes, flipping halfway, until golden and crispy on the edges.
  • Sprinkle with fresh parsley and a pinch of sea salt before serving.

Notes
