  • 1 pound Red potatoes, quartered
  • 1/4 cup olive oil
  • 3 teaspoons minced garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 cup grated parmesan cheese

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the quartered red potatoes with olive oil, minced garlic, oregano, salt, and black pepper until well coated.
  • Spread the potatoes in a single layer on a baking sheet.

Cooking

  • Roast in the preheated oven for 25-30 minutes, or until golden and crispy, stirring halfway through.
  • Remove from the oven and sprinkle with grated parmesan cheese.
  • Return to the oven for an additional 5 minutes until the cheese is melted and bubbly.
  • Serve hot.

Notes

Cut the potatoes into similar sizes to ensure even cooking. Feel free to add your favorite herbs or spices for extra flavor. Rosemary or thyme can be great additions! For a little kick, add some red pepper flakes before roasting.
