  • 10 to 12 pieces soft mozzarella balls (bocconcini or ciliegine)
  • 5 to 6 strips bacon, each cut in half Use thick-cut bacon for extra crispiness.
  • 2 big skinless, boneless chicken breasts, sliced into chunks about 2 inches wide Ensure even cooking by cutting chicken into similar sizes.
  • 1 teaspoon black pepper, ground
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1 teaspoon Italian blend herb mix Feel free to customize with your favorite herbs.
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 2 tablespoons chopped fresh parsley, for topping (optional)

Instructions
 

Preparation

  • Preheat your oven or grill to 400°F (200°C).
  • In a bowl, combine the chicken cubes and olive oil. Add garlic powder, smoked paprika, Italian herb mix, pepper, and salt. Mix until well coated.
  • Lay each chicken chunk flat and place a mozzarella ball in the center. Wrap the chicken around the cheese.
  • Wrap a piece of bacon around each chicken bomb. Use a toothpick to secure if necessary.

Cooking

  • Thread three or four bacon-wrapped chicken bombs onto each skewer.
  • Place the skewers on the grill or in the oven and cook for 20 to 25 minutes, turning halfway through for even browning.

Serving

  • After cooking, remove skewers and let them rest before removing toothpicks. Optionally, sprinkle with chopped parsley and serve hot.

Notes

These skewers are best served hot. Pair with a fresh salad, garlic bread, or a dipping sauce for more flavor. Store leftovers in an airtight container in the fridge for up to 3 days.
