  • 1/4 cup olive oil For sautéing.
  • 1/2 cup chicken broth Vegetable broth can be used as a substitute.
  • 1/4 cup grated Parmesan cheese Can use nutritional yeast for a dairy-free option.
  • 1 tbsp garlic, minced Use fresh garlic for better flavor.

Cooking Instructions

  • In a large skillet, heat the olive oil over medium heat.
  • Add the minced garlic and sauté for 1 minute until fragrant.
  • Add the cubed chicken breast to the skillet and cook until browned and cooked through, about 6-8 minutes.
  • Add the broccoli florets and chicken broth, cover, and let simmer for 5 minutes.
  • Stir in the spinach leaves and cook until wilted.
  • Remove from heat and sprinkle with grated Parmesan cheese before serving.

Notes

Serve with quinoa or brown rice for a complete meal. Can add lemon juice or balsamic reduction for extra flavor.
