Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, mix together the olive oil, minced garlic, dried thyme, salt, and pepper.
  • Add the chicken thighs to the bowl and coat them with the mixture.
  • In another bowl, toss the cubed potatoes with olive oil, garlic, thyme, salt, and pepper.

Cooking

  • Place the chicken and potatoes in a baking dish or on a baking sheet.
  • Bake for 30-35 minutes or until the chicken is cooked through and the potatoes are golden and crispy.
  • Garnish with fresh parsley before serving.

Notes

For extra flavor, marinate the chicken thighs in the olive oil mixture for a few hours or overnight. Ensure potatoes are cut into uniform cubes for even cooking. Feel free to add other vegetables for variety. Avoid microwaving leftovers to keep potatoes crispy.
