Fruits and Liquids

  • 2 cups fruit (choose one or a combination: watermelon, strawberries, mango, pineapple, or kiwi) Use fresh or thawed frozen fruit.
  • 2 tablespoons apple juice (or full fat coconut milk, solids only, or plain whole milk yogurt) Choose based on desired creaminess.
  • 2 teaspoons honey (or maple syrup; optional) Adjust sweetness as desired.
  • 1 teaspoon fresh lime juice (optional) Adds a zesty flavor.

Preparation

  • Gather your choice of 2 cups of fresh or thawed frozen fruit.
  • Measure out 2 tablespoons of apple juice, full-fat coconut milk solids, or plain whole milk yogurt.
  • Optionally, have honey or maple syrup and fresh lime juice ready.
  • Add all the fruit, liquid, honey or maple syrup, and lime juice to a blender.
  • Blend until the mixture is very smooth and creamy.
  • Taste the blend and adjust the sweetness if necessary.
  • Pour the mixture into ice pop sleeves or popsicle molds carefully.
  • Place the filled molds in the freezer to freeze for at least 4 hours or overnight.

Serving

  • Once fully frozen, remove the ice pops from molds or sleeves gently.
  • Run the molds briefly under warm water or let them sit at room temperature for easier removal.
  • Serve cold, optionally with a side of fresh fruit salad, yogurt, or honey.

Notes

Store leftover fruit ice pops in the freezer for up to two months in airtight containers. Let them sit at room temperature for a few minutes before serving to soften slightly for easier enjoyment.
