Ingredients
  

Dried Fruits and Nuts

  • 3 cups mixed dried fruits (raisins, apricots, cherries) Chop into smaller pieces for even distribution.
  • 1 cup mixed nuts (walnuts, almonds, pecans) Chop into smaller pieces for even distribution.

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Wet Ingredients

  • 1 1/2 cups honey or maple syrup For added sweetness.
  • 1/2 cup buttermilk
  • 2 units eggs Can be replaced with flaxseed meal or applesauce for a vegan version.
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a large bowl, mix the dried fruits and nuts.
  • In another bowl, combine the flours, baking soda, cinnamon, nutmeg, and salt.
  • In a separate bowl, whisk together the honey or maple syrup, buttermilk, eggs, oil, and vanilla.
  • Combine the wet and dry ingredients, then fold in the fruit and nut mixture.

Baking

  • Pour the batter into the prepared loaf pan.
  • Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.

Cooling and Serving

  • Allow to cool before slicing and serving.

Notes

Fruit bread can be served plain, with butter or cream cheese, or with a drizzle of honey or syrup. Store in an airtight container at room temperature for up to five days. It can be frozen for up to three months. Experiment with nuts and dried fruits according to your preference.
