  • 1.5 cups cheesecake filling Can use store-bought for convenience.
  • 1/2 cup mini chocolate chips Optional replacement with nuts or fruit.

Assembly

  • Arrange half of the cookie discs in a single layer in a suitable dish.
  • Spread half of the cheesecake filling over the cookies and sprinkle with half of the chocolate chips.
  • Repeat the layers with the remaining cookies, cheesecake filling, and chocolate chips.
  • Cover and freeze for several hours or until firm.
  • Slice and serve chilled.

Notes

Serve chilled with extra chocolate chips or fresh berries. Store leftovers in an airtight container in the freezer for up to two weeks.
