Ingredients
  

For the Pumpkin Bars

  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons ground cinnamon
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 15 ounces 100% pure pumpkin puree (Libby's brand)
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1/2 cup canola oil
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract

For the Cream Cheese Frosting

  • 8 ounces cream cheese, softened to room temperature
  • 6 tablespoons unsalted butter, softened to room temperature
  • 2 cups powdered sugar, sifted
  • 1 tablespoon heavy cream
  • 1 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  • In a medium bowl, whisk together the flour, cinnamon, baking soda, salt, ginger, and nutmeg.
  • In a large bowl, combine the pumpkin puree, granulated sugar, brown sugar, canola oil, eggs, and vanilla extract. Mix well.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Pour the batter into the prepared baking pan and spread it evenly.

Baking

  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the bars to cool in the pan before frosting.

Frosting

  • For the frosting, beat together the cream cheese and butter until smooth.
  • Gradually add the powdered sugar, heavy cream, and vanilla extract, and continue to beat until fluffy.
  • Spread the frosting over the cooled pumpkin bars.

Serving

  • Cut into squares and serve.

Notes
