Preparation

  • Start by washing and slicing the fresh okra into ½-inch pieces.
  • In a bowl, whisk together the egg and milk until well combined.
  • Toss the sliced okra in the egg mixture, ensuring it is fully coated.
  • In a separate bowl, mix the cornmeal, flour, salt, and pepper together.

Frying

  • Dredge the okra pieces in the cornmeal mixture, making sure each piece is evenly coated.
  • Heat oil in a skillet over medium-high heat and fry the coated okra until golden brown, about 3-4 minutes per side.
  • Drain on paper towels before serving.

Notes

For an extra crunch, double-coat the okra by dipping it back into the egg mixture and then into the cornmeal mixture again. Ensure the oil is hot enough before frying for the best results.
