For the Street Corn Mixture
  • 1 cup corn Fresh, grilled, or frozen corn can be used.
  • 1/4 cup mayonnaise Creamy base for the corn mixture.
  • 2 tbsp lime juice Adds a zesty flavor.
  • 1 jalapeno finely chopped Adjust spice level to taste.
For Assembling Tacos
  • Taco shells Taco shells

Marinating the Chicken
  1. Begin by marinating the chicken tenders in pickle juice for at least 1 hour.
Preparing the Chicken
  1. In a separate bowl, whisk together buttermilk, salt, and pepper.
  2. Dip the marinated chicken in the buttermilk mixture.
  3. Heat oil in a frying pan over medium-high heat.
  4. Fry the chicken tenders until golden brown and cooked through, about 6-8 minutes.
Making the Street Corn Mixture
  1. While the chicken is frying, combine corn, mayonnaise, lime juice, chopped jalapeno, salt, and pepper in another bowl to make the street corn mixture.
Assembling Tacos
  1. Once the chicken is cooked, assemble your tacos by placing pieces of fried chicken into each taco shell.
