Fresh Ingredients

  • 6-8 medium medium fresh tomatoes, chopped About 2 pounds
  • 1/2 medium red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 piece jalapeño, seeds removed for mild, finely diced
  • 1/2 cup fresh cilantro leaves, chopped

Flavoring Ingredients

  • 2 tablespoons lime juice Juice of about 2 limes (around 3-4 tablespoons)
  • 1/2 teaspoon salt Or to taste
  • 1/4 teaspoon ground cumin Optional
  • 1 tablespoon apple cider vinegar

Optional Add-ins

  • to taste Chopped mango or pineapple
  • to taste Green onions
  • to taste Diced cherry tomatoes

Instructions
 

Preparation

  • Wash and chop the tomatoes, onion, jalapeño, garlic, and cilantro. Remove jalapeño seeds for less heat.
  • In a large bowl, combine the tomatoes, onion, jalapeño, garlic, and cilantro.
  • Add the lime juice, salt, cumin (optional), and vinegar. Mix thoroughly.
  • Let the salsa rest for 15-20 minutes to allow the flavors to develop before serving.

Notes

Store the salsa in an airtight container in the refrigerator for up to three days for best flavor. Can be frozen, but best enjoyed fresh.
