  • 7 pieces garden tomatoes (small to medium) Choose ripe tomatoes for the best flavor.
  • 2 pieces jalapeño peppers Adjust according to your spice preference.
  • 1/4 cup white onion
  • 1 clove garlic
  • 1/4 cup cilantro leaves, packed
  • 1 tablespoon avocado oil
  • 1 tablespoon vinegar
  • 1 teaspoon ground cumin
  • to taste Salt
  • to taste Lime juice Freshly squeezed is best.

Preparation

  • Chop the tomatoes into small pieces.
  • Cut the jalapeño peppers in half and remove the seeds and ribs to reduce the heat.
  • In a food processor, combine the jalapeños, onion, garlic, cilantro leaves, avocado oil, vinegar, cumin, salt, and lime juice. Pulse until the mixture becomes fine.
  • Pour this mixture over the chopped tomatoes and mix well.
  • Let the salsa sit for about an hour to allow the flavors to meld together.

Storage

  • Store in the refrigerator, covered, for up to 7 days.
