Main Ingredients

  • 1 lb ground beef Use lean ground beef for less grease.
  • 1 small onion, finely chopped
  • 1 can French onion soup (10.5 oz)
  • 1 can cream of mushroom soup (10.5 oz)
  • 1 cup beef broth Low-sodium option recommended.
  • 1 cup long-grain white rice, uncooked Brown rice can be used with adjusted cooking time.
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 cup shredded mozzarella or Swiss cheese Mix different types of cheese for flavor.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, brown the ground beef and onion over medium heat until the beef is no longer pink; drain.
  • Stir in the French onion soup, cream of mushroom soup, beef broth, rice, garlic powder, black pepper, and salt.
  • Pour the mixture into a greased 9×13 inch baking dish.

Baking

  • Cover with aluminum foil and bake for 45 minutes.
  • Uncover, stir, and top with shredded cheese.
  • Bake uncovered for an additional 15 minutes, or until the cheese is melted and bubbly.
  • Let sit for a few minutes before serving. Enjoy!

Notes

Serve with a fresh green salad, crusty bread, or steamed vegetables. Store leftovers in an airtight container for up to 3 days in the fridge, or freeze for up to 3 months.
