  • 1 lb beef short ribs (bone-in) Choose well-marbled for best flavor.
  • 2 tbsp olive oil For searing the ribs.

  • to taste Black pepper

Vegetables

  • 4 large onions, thinly sliced Caramelized for sweetness.

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Season the beef short ribs with salt and black pepper.
  • Sear the short ribs on all sides until browned, then remove and set aside.
  • Add the onions to the pot and cook until caramelized, about 20-30 minutes.
  • Return the short ribs to the pot.
  • Add water or beef broth to cover the ribs and onions.
  • Bring to a boil, then reduce the heat and simmer for about 2-3 hours until the ribs are tender.
  • Adjust seasoning to taste and serve hot.

Notes

Serve with a side of crusty bread, fresh salad, or topped with croutons or fresh herbs. For longer storage, freeze in individual portions.
