Main Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 cups bell peppers, diced Use a mix of colors for visual appeal
  • 1 medium onion, diced Yellow onions preferred, red can be used for sweetness
  • 3 cloves garlic, minced Fresh is best for flavor
  • 1/4 cup fresh cilantro, chopped Substitute with parsley if preferred
  • 1 tablespoon olive oil For sautéing
  • 1 lime juiced Fresh lime for brightness
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • salt to taste
  • black pepper to taste

Preparation

  • Dice the bell peppers and onion into bite-sized pieces and mince the garlic. Set aside.

Cooking

  • Heat a large skillet over medium-high heat and add olive oil.
  • Season both sides of the chicken breasts with salt, pepper, cumin, paprika, and chili powder.
  • Once the oil is hot, add the chicken and sear until golden on both sides, about 5-7 minutes per side.
  • Remove the chicken from the skillet and set it aside.
  • In the same skillet, add more oil if needed, then toss in the diced onions and sauté until translucent.
  • Add the minced garlic and bell peppers, cooking until they are tender for about 4-5 minutes.
  • Slice the seared chicken and nestle it back into the skillet with the vegetables.
  • Pour in fresh lime juice and a splash of water, scraping any flavorful bits off the bottom of the pan.
  • Let it simmer for 5-7 minutes until the chicken is cooked through.
  • Just before serving, sprinkle freshly chopped cilantro over the top.

Notes
