Preparation

  • Preheat your grill or skillet over medium-high heat.
  • Char whole tomatoes and jalapeños until skins are blistered.
  • Remove the skins from charred tomatoes and jalapeños and allow them to cool slightly.
  • Dice the charred tomatoes, jalapeños, and onion, and mince the garlic.
  • In a mixing bowl, combine the diced ingredients, cilantro, and lime juice; mix gently.
  • Season the salsa with salt and pepper to taste.
  • Let the salsa chill in the refrigerator for at least 30 minutes before serving.

Use ripe, in-season tomatoes for the best flavor. Taste your salsa before serving; adjust lime and salt for your preference. Salsa can be stored in an airtight container in the refrigerator for 3-5 days, or frozen for up to 3 months.
