  • 1 cup Fresh hot peppers (your choice) Or dried pepper flakes (adjust quantity accordingly)
  • 4 cloves Garlic cloves (minced) Or 2 teaspoons dried garlic
  • 1 tablespoon Salt Sea salt or kosher salt
  • 1 cup Water Or vegetable broth for added flavor
  • ½ cup Vinegar (optional) Or squeeze of lime or lemon juice
  • ½ cup Sweet element (like mango, chopped) Pineapple, peach, or apple can be used as substitutes

Preparation

  • Rinse, de-seed (if desired), and chop your hot peppers. Peel and mince the garlic. If using sweet fruits, chop them into small chunks.
  • In a mixing bowl, combine your chopped peppers, minced garlic, sweet element, and salt. Stir until coated.
  • Transfer the mixture to a clean glass jar, leaving enough space at the top for fermentation gases. Pour in filtered water until the ingredients are submerged—add a weight if necessary.
  • Seal the jar loosely with a lid or cover it with a clean cloth secured with a rubber band. Place it in a cool, dark spot in your kitchen.
  • Allow it to ferment for about 5-14 days, checking daily for bubbles or signs of fermentation. Taste it along the way—when it reaches your desired flavor, it’s ready!
  • Once fermented to your liking, transfer the contents to a blender and purée until smooth. If you prefer a thinner consistency, add a touch of vinegar or water.
  • Pour your vibrant creation into a sterilized bottle and store it in the refrigerator. The flavor will continue to deepen over time.
