Ingredients
  

Main ingredients

  • 2 cups cooked chicken, shredded
  • 1 bell pepper bell pepper, sliced
  • 1 onion onion, sliced
  • 1 teaspoon fajita seasoning
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 4 large tortillas
  • 1 tablespoon olive oil
  • to taste Salt and pepper

Instructions
 

Preparation

  • In a skillet, heat olive oil over medium heat.
  • Add sliced bell pepper and onion, and sauté until tender.
  • Stir in the shredded chicken and fajita seasoning, cooking until heated through.
  • Place a tortilla in the pan, sprinkle half of it with cheese, add the chicken and veggie mixture, and top with more cheese.
  • Fold the tortilla over and cook until golden brown on both sides and the cheese is melted.
  • Remove from heat, cut into wedges, and serve.

Notes

Best served hot and fresh. Can be enjoyed as is or with salsa, guacamole, or sour cream. Store leftovers in an airtight container in the refrigerator for 3-4 days and reheat in a skillet.
