  • 16 oz egg whites (in brick or from 16 fresh eggs)
  • ½ cup cottage cheese (full fat recommended)
  • cup shredded mozzarella (or Monterey Jack)
  • cup fresh spinach (chopped)
  • ¼ cup red bell pepper (roasted and diced)
  • tsp sea salt (or more to taste)
  • tsp garlic powder
  • Black pepper (to taste)

Instructions
 

Preparation

  • Preheat your oven to 300°F (150°C). Spray a silicone muffin pan with cooking spray or grease it with oil.
  • (Optional) To make your Egg White Bites extra fluffy, place a rack in the center of the oven. Add a second rack beneath it and fill a large baking pan with water, placing it on the lower rack to create steam.
  • In a blender, combine the liquid egg whites, cottage cheese, shredded mozzarella, sea salt, garlic powder, and black pepper. Blend until smooth.
  • After blending, use a fork or spoon to mix in the chopped spinach and diced red pepper. Do not blend again.
  • Pour the egg white mixture into each muffin mold, filling them about ¾ full. If you like, sprinkle some more diced red pepper and chopped spinach on top.

Cooking

  • Bake in the middle of the oven for 20 to 25 minutes, or until the bites have set in the center.
  • Let them cool before serving.

Notes

Egg White Bites can be served warm or at room temperature. They are excellent on their own or with fresh fruit and a simple salad. Leftovers can be stored in an airtight container in the refrigerator for up to five days or frozen for longer storage.
