For the Wraps

  • 4 large flour tortillas
  • 1 cup shredded red cabbage
  • 1 cup chopped romaine lettuce
  • 1/2 red bell pepper, sliced thin
  • 1/2 yellow bell pepper, sliced thin
  • 1/2 cup shredded carrots
  • 1/2 cucumber, thinly sliced
  • 2 green onions, thinly sliced
  • 1/2 cup hummus
  • 1/2 cup cream cheese, softened
  • 1/4 teaspoon salt

Preparation

  • In a bowl, combine the red cabbage, lettuce, bell peppers, carrots, cucumber, and green onions.
  • Lay tortillas flat on a clean surface or cutting board.
  • Spread cream cheese, then hummus, evenly over each tortilla from edge to edge.
  • Top with an even layer of the veggie mix.
  • Roll the tortillas tightly from one end to the other.
  • Trim edges if needed and slice each wrap in half diagonally.
  • Serve immediately or wrap for later.

Notes
