For the Cobbler

  • 1 cup all-purpose flour
  • 1 cup granulated sugar Divided, with 1/4 cup reserved for topping
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon Adjust to taste
  • 1 cup whole milk Can be substituted with almond milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

For the Topping

  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon

Optional Mix-ins

  • 1 cup chopped nuts (like pecans or walnuts) Optional
  • 1 cup chocolate chips Optional

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, whisk together the flour, 1 cup sugar, baking powder, salt, and 1 teaspoon cinnamon until well combined.
  • In another bowl, combine the milk, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry mixture and stir until everything is just combined.
  • Pour the batter into a greased 8-inch square baking dish.
  • If desired, sprinkle nuts or chocolate chips evenly over the top.
  • In a small bowl, combine the reserved sugar and cinnamon for the topping and sprinkle it over the batter.

Baking

  • Bake for about 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  • Let it cool for a few minutes before serving.

Notes

Serve warm, optionally with vanilla ice cream or whipped cream. Store leftovers in an airtight container in the refrigerator for up to 3 days.
