  • 32 ounces 32 ounces (~8) Roma tomatoes
  • 2 units 2 serrano chiles Leave seeds in for extra spice.
  • ¾ cup ¾ cup white onion (diced)
  • 6 cloves 6 cloves garlic
  • cup ⅛ cup cilantro (loosely packed)
  • 1 tablespoon 1 tablespoon lime juice
  • Salt to taste Adjust according to preference.
  • 1 tablespoon 1 tablespoon olive oil

Instructions
 

Preparation

  • Heat a skillet over medium heat and add olive oil.
  • Sauté diced onions until translucent, about 2-3 minutes.
  • Add garlic and chopped serrano chiles, cooking for an additional minute.
  • Bring a pot of water to a boil and gently add Roma tomatoes; boil for 5 minutes.
  • Remove tomatoes and let cool; peel off the skins.
  • In a blender, combine peeled tomatoes, sautéed garlic, onions, cilantro, and lime juice.
  • Blend to desired consistency—chunky or smooth.
  • Season with salt to taste before serving.

Notes

Store in an airtight container in the fridge for up to a week or freeze small portions for longer storage.
