  • 2 3/4 cups brown sugar
  • 1 cup corn syrup
  • 1 1/4 cup butter
  • 3 large eggs Use room temperature eggs for better mixing.
  • 2 tsp vanilla
  • 4 cups pecan halves (divided into 3 cups and 1 cup) 3 cups for mixing in, 1 cup for topping.
  • 1 box white cake mix

Preparation

  • Preheat the oven to 350°F (175°C). Grease and flour a baking dish.
  • In a large bowl, combine the brown sugar, corn syrup, and butter. Mix well until smooth.
  • Add the eggs and vanilla, stirring until fully incorporated.
  • Gradually add the cake mix, mixing until just combined.
  • Fold in 3 cups of the pecan halves.
  • Pour the batter into the prepared baking dish.
  • Sprinkle the remaining 1 cup of pecans on top.
  • Bake for about 35-45 minutes, or until a toothpick inserted in the center comes out clean.
  • Let it cool before serving.

Notes

Serve warm or at room temperature, plain or with ice cream, chocolate sauce, or powdered sugar. Store covered at room temperature for up to 3 days, or refrigerate for up to a week. Can freeze for up to three months.
