Fruit

  • 4 cups sliced peaches (fresh or drained canned peaches) Use ripe, fresh peaches for the best taste.

Batter

  • 1 cup all-purpose flour Can substitute with gluten-free flour if needed.
  • 1 cup granulated sugar Feel free to increase for a sweeter cobbler.
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, whisk together the flour, sugar, salt, and baking powder.
  • In another bowl, whisk the milk and vanilla until well combined.
  • Pour the melted butter into a 9x13-inch baking dish.
  • Pour the batter over the melted butter without stirring.
  • Arrange the peach slices evenly on top of the batter, but do not stir.

Baking

  • Bake for 40–45 minutes or until the top is golden brown and the peaches are bubbling.
  • Once done, let it cool for 10 minutes.
  • Serve warm, ideally with a scoop of vanilla ice cream.

Notes

If you have leftovers, let the cobbler cool completely before storing it. Place it in an airtight container in the refrigerator for up to 3-4 days. Reheat individual portions in the microwave or warm it in the oven.
