Preparation

  • Preheat the oven to 450 degrees. If you have a convection roast setting, use that. Line a large sheet pan with parchment paper.
  • Dice the potatoes into small pieces, aiming for around 5-6 cups of diced potatoes. Keep the skin on for added nutritional value and place them in a large bowl.
  • In a small bowl, whisk together the paprika, cumin, garlic powder, and sea salt. Pour in the oil and mix until combined.
  • Pour the spice mixture over the potatoes and toss until evenly coated.

Cooking

  • Spread the seasoned potatoes on the prepared sheet pan in an even layer.
  • Roast in the oven for 30-35 minutes, stirring halfway through at the 17-minute mark. They're done when crispy and browned.

Notes

Cut potatoes into uniform pieces for even cooking. Soak diced potatoes in water for extra crispiness if desired.
