Easy Marry Me Chicken Pasta
A creamy and comforting dish featuring tender chicken and pasta, perfect for family dinners or special occasions.
Ingredients
For the chicken
- 2 pieces boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
For the sauce
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- ¼ cup grated Parmesan cheese Use freshly grated for best results.
- ounces pasta (your choice), cooked 12 ounces recommended.
- to taste Fresh basil for garnish
- to taste Optional: chili flakes for a spicy kick
Instructions
Preparation
- Cook your pasta according to the package instructions until al dente. Drain and set aside, saving a cup of the pasta water.
- Season both sides of the chicken breasts with salt and pepper.
- In a large skillet, heat the olive oil over medium heat. Add the chicken and cook for 5-7 minutes on each side, or until golden brown and cooked through.
- Remove the chicken from the skillet and let it rest on a cutting board, then slice it into thin strips.
Cooking
- In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the halved cherry tomatoes and cook until softened, around 2-3 minutes.
- Pour in the heavy cream and stir in the Italian seasoning. Let the mixture simmer on low heat for 5-7 minutes until it thickens slightly.
- Stir in the Parmesan cheese until melted. If the sauce is too thick, add some reserved pasta water to adjust consistency.
- Add the sliced chicken and cooked pasta to the skillet, tossing everything in the creamy sauce until fully coated. Cook together for another minute.
Notes
Serve with fresh basil and optional chili flakes. Pair with a side salad or garlic bread for a complete meal. Store leftovers in an airtight container in the fridge for up to 3 days.
