  • 4 medium fresh tomatoes Choose ripe tomatoes for the best flavor.
  • 1 medium bell pepper Chopped finely.
  • 1 medium onion Chopped finely.
  • 2 cloves garlic Minced.
  • 1/4 cup cilantro Chopped.
  • 2 tablespoons lime juice Freshly squeezed.
  • 1 teaspoon Mexican spices Like cumin and chili powder, adjust to taste.
  • 1/2 teaspoon salt Adjust according to preference.

Preparation

  • Chop the fresh tomatoes, bell peppers, and onions into small pieces.
  • In a large bowl, combine the chopped vegetables with minced garlic, chopped cilantro, lime juice, Mexican spices, and salt to taste.
  • Mix well to combine all the ingredients.
  • Transfer the salsa into jars, leaving about half an inch of space at the top.
  • Process the jars in a hot water bath for the recommended time based on your altitude and jar sizes.
  • Allow the jars to cool and store them in a cool, dark place.

Notes

For a smoother salsa, blend the ingredients instead of chopping them. Let the salsa sit in the fridge for a couple of hours before serving to enhance the flavors.
