Ingredients
  

For the blueberry filling

  • 2.5 cups fresh or frozen (thawed) blueberries
  • 0.5 pieces lemon (juiced)
  • 1 teaspoon vanilla extract
  • 1 cup white sugar (or to taste)
  • 0.5 teaspoon all-purpose flour
  • 1 tablespoon butter (melted)

For the cobbler topping

  • 1.75 cups all-purpose flour
  • 4 teaspoons baking powder
  • 6 tablespoons white sugar
  • 5 tablespoons butter
  • 1 cup milk
  • 2 teaspoons sugar
  • 1 pinch ground cinnamon

Preparation

  • Lightly grease an 8-inch square baking dish.
  • In the baking dish, combine blueberries, lemon juice, and vanilla extract. Sprinkle with 1 cup sugar and ½ teaspoon flour. Drizzle 1 tablespoon melted butter over the top and stir to combine everything evenly.

Make Topping

  • In a medium bowl, mix 1 ¾ cups flour, baking powder, and 6 tablespoons sugar. Cut in 5 tablespoons butter using a pastry blender or two forks until the mixture resembles coarse crumbs.
  • Gradually add milk to form a thick batter. Let the batter rest for 10 minutes.

Assemble

  • Spoon the rested batter over the blueberry mixture, spreading it out to cover most of the fruit. Leave a few small holes for the berries to peek through.

Bake

  • Mix 2 teaspoons sugar with a pinch of cinnamon and sprinkle this mixture over the batter.
  • Preheat your oven to 375°F (190°C). Place the dish in the oven and bake for 20-25 minutes, or until the topping is golden brown and a knife inserted into the center comes out clean.

Serve

  • Allow the cobbler to cool slightly before serving warm.

Notes

Serve warm, with ice cream or whipped cream if desired. Store leftovers in an airtight container in the refrigerator for up to 3 days.
