  • 200 g Roasted hazelnuts Finely chopped
  • 3 large Egg whites Beaten until firm
  • 150 g Sugar Adjust sweetness to preference

Preparation

  • Preheat the oven to 160°C (320°F). Line a baking sheet with parchment paper.
  • Finely chop the roasted hazelnuts until they have a grainy texture.
  • In a mixing bowl, beat the egg whites with an electric whisk until they start to rise. Gradually add the sugar while whisking until you achieve a firm and shiny meringue.
  • Gently fold the chopped hazelnuts into the meringue using a spatula.
  • Transfer the mixture to a piping bag and pipe small mounds onto the prepared baking sheet.
  • Bake at 160°C (320°F) for about 15 minutes. Let the cookies cool completely before serving.

Notes

Store in an airtight container at room temperature for about a week. For longer storage, freeze in a freezer-safe bag or container.
