  • 1 cup heavy cream
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 2 tablespoons olive oil

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add onion and garlic, and sauté until softened.
  • Add diced tomatoes and vegetable broth. Simmer for about 10 minutes.
  • Use an immersion blender to blend the soup until smooth.
  • Stir in heavy cream, then season with salt and pepper.
  • Simmer for another 5 minutes, then serve hot with fresh basil on top.

Notes

Serve with crusty bread or a grilled cheese sandwich. Leftover soup can be stored in the fridge for up to three days or frozen for up to three months. When reheating, warm gently. Experiment with fresh herbs like thyme or oregano.
