  • 2 pieces chicken breasts, sliced
  • 2 cups chicken broth Use low-sodium for reduced sodium content.
  • 2 packs ramen noodles Choose gluten-free noodles if desired.
  • 1/4 cup teriyaki sauce
  • 1 cup mixed vegetables (broccoli, carrots, bell peppers) Feel free to substitute with other vegetables.
  • 2 pieces green onions, sliced For garnish.
  • Sesame seeds for garnish
  • Salt and pepper to taste

Cooking

  • In a pan, heat a little oil and cook the sliced chicken until golden brown. Season with salt and pepper.
  • Add the mixed vegetables and stir-fry for about 3-4 minutes.
  • Pour in the chicken broth and bring to a boil.
  • Add the ramen noodles and cook according to package instructions (usually 3-4 minutes).
  • Stir in the teriyaki sauce and mix well.
  • Serve hot, garnished with green onions and sesame seeds.

Notes

Serve with a side of cucumber salad or crispy spring rolls. For added heat, drizzle with Sriracha.
