Main ingredients

  • 3 cups shredded cooked chicken You can use rotisserie chicken for convenience.
  • 10.5 oz condensed cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup milk
  • 2 tbsp dry ranch seasoning
  • 1.5 cups shredded Colby Jack cheese Reserve 1 cup for topping.
  • 4 slices cooked crumbled bacon
  • 5 cups frozen tater tots Single layer on top of the casserole.
  • 1/4 cup sliced green onions For garnish.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the shredded chicken, cream of chicken soup, sour cream, milk, and ranch seasoning. Mix until well combined.
  • Stir in the cooked bacon and 1 cup of the shredded cheese.
  • Spread the mixture evenly in a greased 9×13 inch baking dish.
  • Top with the frozen tater tots in a single layer.
  • Sprinkle the remaining cheese over the tater tots.

Baking

  • Bake in the preheated oven for 30-35 minutes or until the tater tots are golden brown and crispy.
  • Garnish with sliced green onions before serving.

Notes

Serve hot out of the oven with a simple green salad or veggie sticks. Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for longer storage. For variations, consider adding peas, corn, or diced jalapeños.
