  • 8 large eggs
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked sausage, crumbled
  • 2 cups diced bread (preferably stale)
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup diced vegetables (bell peppers, onions, etc.)

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, whisk together the eggs, milk, salt, and pepper.
  • Stir in the cooked sausage, bread, cheese, and vegetables until well combined.
  • Pour the mixture into a greased 9x13 inch baking dish.
  • Bake for 30-40 minutes, or until the casserole is set and lightly golden on top.
  • Allow to cool for a few minutes before slicing and serving.

Notes

Use stale bread for better texture. Feel free to mix and match your vegetables and meats. You can prepare the casserole the night before and bake it in the morning. For a vegetarian option, leave out the sausage and add more vegetables.
