  • 1 teaspoon ground cinnamon
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 3 medium bananas mashed
  • 1/2 cup buttermilk
  • 1 1/2 teaspoons vanilla extract
  • 1/3 cup oil
  • 2 large eggs

Roll Cake

  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup mashed bananas
  • 1/2 cup powdered sugar for dusting
  • 4 ounces cream cheese
  • 1/3 cup light brown sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup whipped topping
  • 1 tablespoon powdered sugar
  • 3 tablespoons caramel sundae topping

Pudding Cake

  • 1 box yellow cake mix prepared according to package instructions
  • 5.1 ounces instant banana-flavored pudding
  • 3 1/2 cups whole milk
  • 2-3 bananas sliced for layering
  • 8 ounces Cool Whip
  • 12 vanilla wafers for garnish

Pudding Brownies

  • 3/4 cup unsalted butter melted
  • 1 cup light brown sugar
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 8 ounces cream cheese softened
  • 3.4 ounces instant banana cream pudding mix
  • 1/4 cup whole milk
  • 16 vanilla wafer cookies for layering

Instructions
 

Upside Down Cake

  • Preheat oven to 350°F.
  • In a saucepan, melt butter and brown sugar, then pour into a baking pan.
  • Layer sliced bananas on top.
  • In a bowl, mix flour, baking soda, baking powder, salt, and cinnamon.
  • In another bowl, combine sugars, mashed bananas, buttermilk, vanilla, oil, and eggs.
  • Combine both mixtures and pour over bananas.
  • Bake for 35-40 minutes until golden brown.

Roll Cake

  • Preheat oven to 350°F.
  • Beat eggs and sugar until fluffy.
  • Mix the dry ingredients together and then add to the egg mixture alternately with the mashed bananas.
  • Spread batter onto a greased jelly roll pan and bake for 10-12 minutes.
  • Spread filling on top, roll carefully, and dust with powdered sugar and caramel topping.

Pudding Cake

  • Prepare the yellow cake mix according to package instructions.
  • In a separate bowl, mix pudding together with the cold milk.
  • Once the cake cools, layer with pudding and sliced bananas.
  • Top with Cool Whip and garnish with vanilla wafers.

Pudding Brownies

  • Preheat oven to 350°F.
  • Melt butter and mix with brown sugar, eggs, and vanilla.
  • Add flour, baking powder, and salt.
  • Pour half into a greased pan.
  • Mix cream cheese with pudding, eggs, and milk, then layer over brownie batter.
  • Top with remaining batter.
  • Bake for 25-30 minutes.
