  • 3 pieces ripe bananas Use overripe for a sweeter flavor.
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • a pinch pinch salt
  • 3/4 cup sugar
  • 1 large egg, beaten Can substitute with flax egg for a vegan option.
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, mash the ripe bananas with a fork until smooth.
  • Stir in the melted butter.
  • Mix in the baking soda and salt.
  • Add the sugar, beaten egg, and vanilla extract, and mix until combined.
  • Finally, stir in the flour until just incorporated.

Baking

  • Pour the batter into a greased loaf pan.
  • Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
  • Let it cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

Notes

Serve warm or at room temperature. Pairs nicely with coffee or tea. Store in an airtight container for 3-4 days or freeze for up to 3 months.
