  • 2 pieces ripe bananas Use very ripe bananas for best flavor.
  • 1/2 cup sugar
  • 1/4 cup melted butter
  • 1 piece egg Can be substituted with flaxseed meal or applesauce.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour Can be swapped for whole wheat flour for a healthier option.

Optional Add-ins

  • 1/2 cup nuts or chocolate chips Optional mix-ins for added flavor.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, mash the bananas with a fork.
  • Stir in the melted butter.
  • Mix in the sugar, egg, and vanilla.
  • Sprinkle the baking soda and salt over the mixture, then mix in the flour.
  • If desired, fold in nuts or chocolate chips.
  • Pour the batter into a greased loaf pan.

Baking

  • Bake for 60-65 minutes or until a toothpick comes out clean.
  • Let cool before slicing.

Notes

Enjoy warm or at room temperature, spread with butter or topped with peanut butter. For storage, wrap tightly in plastic wrap and keep at room temperature for up to 3 days, or freeze for up to 3 months.
